Instructions

  1. Season tuna with salt and set aside.

  2. Add oil to a medium pan to about 1/2 inch depth, then add garlic, peppercorns, bay leaf, citrus zest, and chile.

  3. Warm the oil over medium-low heat until small bubbles form, then carefully add the tuna filets.

  4. Maintain a gentle simmer, cooking tuna for 8 to 10 minutes until cooked through, flipping halfway if necessary for even cooking.

  5. Transfer the cooked tuna from the oil to a prepared rack or paper towels for draining.

  6. Serve the tuna whole, sliced, or flaked.
