Old Thyme Sour Cocktail
An old thyme sour reinvents the traditional whiskey sour with a blend of Irish whiskey, elderflower liqueur, thyme, and cinnamon.

To make the simple syrup, bring water to a boil in a saucepan, dissolve the sugar, then add a cinnamon stick and thyme; simmer for 20-30 minutes, then strain, cool, and bottle.

For the cocktail, coat two thyme sprigs with Chartreuse in an old-fashioned glass, then set aside.

In a cocktail shaker, combine 2 thyme sprigs, whiskey, elderflower liqueur, lemon juice, the prepared cinnamon-thyme syrup, egg white, and bitters; dry shake.

Add ice to the shaker and shake thoroughly.

Light the Chartreuse-soaked thyme in the prepared glass.

Double strain the shaker contents into the glass, extinguishing the flame.

Add lemon zest and fresh ice.

Garnish with a lemon slice and a thyme sprig.
