Old Thyme Sour Cocktail

Instructions

  1. To make the simple syrup, bring water to a boil in a saucepan, dissolve the sugar, then add a cinnamon stick and thyme; simmer for 20-30 minutes, then strain, cool, and bottle.

  2. For the cocktail, coat two thyme sprigs with Chartreuse in an old-fashioned glass, then set aside.

  3. In a cocktail shaker, combine 2 thyme sprigs, whiskey, elderflower liqueur, lemon juice, the prepared cinnamon-thyme syrup, egg white, and bitters; dry shake.

  4. Add ice to the shaker and shake thoroughly.

  5. Light the Chartreuse-soaked thyme in the prepared glass.

  6. Double strain the shaker contents into the glass, extinguishing the flame.

  7. Add lemon zest and fresh ice.

  8. Garnish with a lemon slice and a thyme sprig.
