Old-Fashioned Vegetable Beef Soup
A classic vegetable beef soup featuring tender beef and a medley of diced and sliced vegetables.

Instructions

Heat bacon drippings or oil in a large pot over medium-high heat.

Brown beef shanks on all sides.

Cover beef with water, add salt, pepper, and onion; bring to a boil, then cover and simmer for 2 hours.

Stir in carrots, green beans, potatoes, celery, tomatoes, and rice; cover and simmer for 1 more hour.

Remove bones from the soup, dice the meat, and return it to the pot.

Adjust seasonings and stir in parsley.
