Old-Fashioned Vegetable Beef Soup

Instructions

  1. Heat bacon drippings or oil in a large pot over medium-high heat.

  2. Brown beef shanks on all sides.

  3. Cover beef with water, add salt, pepper, and onion; bring to a boil, then cover and simmer for 2 hours.

  4. Stir in carrots, green beans, potatoes, celery, tomatoes, and rice; cover and simmer for 1 more hour.

  5. Remove bones from the soup, dice the meat, and return it to the pot.

  6. Adjust seasonings and stir in parsley.
