Instructions

  1. In a heavy saucepan over low heat, combine all ingredients except evaporated milk, stirring until the sugar completely dissolves.

  2. Increase heat to bring the mixture to a boil. Slowly add the evaporated milk in a thin stream, ensuring boiling does not stop.

  3. Insert a candy thermometer and continue stirring constantly. Cook until the mixture reaches 248 F, periodically brushing down the pan's sides with a water-dipped pastry brush to prevent crystallization.

  4. Remove from heat, discard the thermometer, and pour the mixture onto a generously greased platter, without scraping the pan's sides or bottom.

  5. Allow the taffy to cool until it is cool enough to handle. Grease your hands, then pull small portions of the candy with your fingertips until it turns white and is no longer sticky.

  6. Twist each pulled strip and place on waxed paper. Cut the candy into 1-inch pieces, wrap each piece in waxed paper, twist the ends, and store in an airtight container.
