Instructions

  1. Start boiling water for a water bath.

  2. Wash, hull, and halve or quarter the strawberries.

  3. Combine berries with sugar in a large pan; let sit at room temperature for 2 hours, then refrigerate overnight.

  4. Bring the strawberry mixture to a slow boil, stirring occasionally, then add lemon juice.

  5. Cook rapidly over medium heat until the mixture reaches 221 F (25-45 minutes), skimming any foam.

  6. Ladle preserves into hot, sterilized jars, leaving 1/4-inch headspace.

  7. Process jars in the boiling water bath for 10 minutes.

  8. Cool preserves, then store them in the refrigerator.
