Old-Fashioned Southern Giblet Dressing

Instructions

  1. Preheat the oven to 350 F.

  2. In a saucepan, cover giblets (excluding liver) with water and salt; simmer for 2 hours until tender.

  3. Add the liver and continue to simmer for 25 minutes.

  4. Cool slightly, then remove and chop the giblets, reserving 1 cup of broth.

  5. Melt butter in a skillet, then cook onion and celery until tender.

  6. Combine the cooked vegetables, pecans, breadcrumbs, chopped giblets, seasoned salt, poultry seasoning, and pepper in a large bowl.

  7. Add the reserved broth and toss to moisten.

  8. Transfer the mixture to a buttered 2-quart baking dish.

  9. Cover and bake for 40 to 45 minutes.
