Instructions

  1. Start boiling water for the potatoes. Peel the potatoes, place them in a medium saucepan, cover with water, and add 1 teaspoon of salt.

  2. Bring the water to a boil, then cover, reduce heat to medium-low, and cook until the potatoes are fork-tender, about 20 to 25 minutes.

  3. Drain the potatoes and cool them completely in the pan with the cover slightly ajar.

  4. Slice the cooled potatoes into 1/4-inch pieces and transfer them to a large bowl.

  5. Peel and thinly slice the onion, then add it to the bowl with the potatoes.

  6. Whisk together the olive oil, vinegar, garlic, minced parsley, sugar, salt, and black pepper in a small bowl.

  7. Pour the prepared dressing over the potatoes and onions, then toss to combine all ingredients.

  8. Taste and adjust seasoning as needed, then cover and chill the salad until serving, preferably for at least 2 hours.
