Instructions

  1. Grease two 13x9-inch baking sheets and place them on a heatproof surface.

  2. In a large saucepan with a candy thermometer, combine sugar, corn syrup, and water.

  3. Cook over medium heat, stirring until sugar dissolves; then add butter and stir until melted.

  4. Continue cooking, stirring frequently, until the syrup reaches 230 F.

  5. At 280 F, add peanuts and stir constantly until the mixture reaches 300 F.

  6. Remove from heat and stir in baking soda until well combined.

  7. Immediately pour the mixture evenly into the prepared baking pans.

  8. As the brittle cools, stretch it thin by pulling the edges with forks.

  9. After 7-8 minutes, loosen and flip the still-flexible brittle to prevent sticking.

  10. Break the hardened candy into pieces and store in an airtight container.
