Instructions

  1. Place onions in a 5 to 6-quart slow cooker, then top with the brisket, fat side up.

  2. Sprinkle garlic over the beef and surround it with chunked carrots and any other root vegetables.

  3. Combine ketchup, vinegar, brown sugar, salt, marjoram, and pepper in a small bowl, then rub this mixture onto the beef.

  4. Pour 1 cup of water into the slow cooker over the vegetables, avoiding the seasoned meat.

  5. Cover and cook on low for 8 to 10 hours, or until the meat is very tender.

  6. Remove the brisket and vegetables, plate them, and cover tightly with foil to keep warm.

  7. Pour the remaining liquid from the slow cooker into a large saucepan.

  8. Whisk 1/2 cup water with flour, then add to the saucepan and bring to a boil, stirring frequently until the gravy thickens.

  9. Stir in Worcestershire sauce and season the gravy with salt as needed.

  10. Slice the brisket and serve with the gravy, onions, and carrots.
