Old-Fashioned Buttermilk Fudge

Instructions

Line an 8x8 inch pan with aluminum foil and spray it with nonstick cooking spray.

Combine buttermilk, butter, corn syrup, sugar, salt, and baking soda in a large pot over medium-high heat, ensuring the pot is large enough to handle significant bubbling.

Stir until the sugar and butter dissolve, then insert a candy thermometer.

Continue cooking, stirring occasionally, until the mixture reaches 240 F (115 C).

Remove the pot from heat and pour vanilla extract over the mixture without stirring.

Allow the candy to cool for 10 to 15 minutes until it reaches approximately 150 F.

Remove the thermometer and add chopped nuts.

Vigorously stir the fudge with a wooden spoon until it thickens and becomes opaque.

Quickly scrape the thickened fudge into the prepared pan and smooth it into an even layer. If it stiffens, mix in a spoonful of hot water to loosen it.

Allow the fudge to set at room temperature for about 2 hours.

Once set, lift the fudge from the pan using the foil and cut it into small squares.
