Instructions

  1. Heat oil in a large lidded pot over medium-high heat.

  2. Brown beef in batches, seasoning with salt and pepper; remove and set aside.

  3. Sauté onions in the same pot for 5 minutes until softened.

  4. Reduce heat to medium-low, stir in flour for 2 minutes, then add garlic for 1 minute.

  5. Add wine, deglazing the pan by scraping up browned bits.

  6. Simmer wine for 5 minutes, then add beef, thyme, rosemary, bay leaf, and broth. Bring to a gentle simmer, cover, and cook on very low for 1 hour.

  7. Stir in potatoes, celery, and carrots; simmer covered for 30 minutes, or until tender. Adjust seasoning.

  8. Remove from heat and let sit for 15 minutes before serving; garnish with parsley if desired.
