Old-Fashioned Banana Pudding

Instructions

  1. Preheat the oven to 350 F.

  2. Combine 3/4 cup sugar, salt, and self-rising flour in the top of a double boiler. Slowly stir in milk and cook over simmering water, stirring until the mixture thickens.

  3. Beat egg yolks, then temper them by briskly stirring in about 1/2 cup of the hot mixture. Add the tempered egg yolks, butter, and vanilla back to the double boiler; cook until the mixture thickens again.

  4. Layer vanilla wafers and sliced bananas in an 11 x 7-inch baking dish until all are used. Pour the pudding mixture over the layers.

  5. Beat egg whites until foamy, then gradually beat in 1/4 cup sugar and cream of tartar until stiff peaks form.

  6. Spread the meringue over the pudding, extending it to the edges of the pan. Bake in the preheated oven until nicely browned.
