Okra Stew With Prawns and Lobster Tails

A West African-inspired okra stew features prawns, and can be enhanced with baked lobster tails for an impressive, flavorful meal.

Instructions

  1. Preheat oven to 400 F.

  2. Heat oil in a large saucepan over medium heat; sauté onions for 5 minutes until softened.

  3. Add tomatoes, garlic, pepper, and ginger; cook for 15 minutes until tomatoes reduce.

  4. Stir in okra, prawns, squid, and fish with stock; simmer on reduced heat for 5-10 minutes until okra is tender, then remove from heat.

  5. Brush lobster tails with butter, place flesh-side up on a baking sheet, and bake for 12-15 minutes.

  6. Transfer stew to a serving dish, garnish with spring onions, and top with the baked lobster tails.
