Okaki (Japanese Rice Crackers) Recipe

Homemade Japanese "okaki" rice crackers are easily prepared by deep-frying dried mochi.

Instructions

  1. If using fresh mochi, roll it thinly, slice into small pieces, and dry on a tray at room temperature in a cool, dry place for four to five days.

  2. Heat canola oil to 340 F in a small pot.

  3. Line a plate with paper towels for draining.

  4. Deep-fry mochi pieces in small batches for about 1 minute per side until browned, turning and removing promptly to prevent burning.

  5. Drain on paper towels.

  6. Season immediately with salt and pepper, or optional furikake.
