Okaki (Japanese Rice Crackers) Recipe
Homemade Japanese "okaki" rice crackers are easily prepared by deep-frying dried mochi.

Instructions

If using fresh mochi, roll it thinly, slice into small pieces, and dry on a tray at room temperature in a cool, dry place for four to five days.

Heat canola oil to 340 F in a small pot.

Line a plate with paper towels for draining.

Deep-fry mochi pieces in small batches for about 1 minute per side until browned, turning and removing promptly to prevent burning.

Drain on paper towels.

Season immediately with salt and pepper, or optional furikake.
