Oil-Free and Fat-Free Fried Zucchini

A healthy and guilt-free preparation of zucchini yields crispy, pan-fried slices that are entirely oil-free, vegan, and gluten-free.

Instructions

  1. Slice zucchini lengthwise into at least 4 long pieces.

  2. Sprinkle a large nonstick pan with a small amount of liquid aminos, then coat each zucchini slice front and back before arranging in the pan.

  3. Cook over medium heat for 5 minutes, then flip; add water or tamari if the pan becomes too dry.

  4. Season the cooked side with garlic powder, onion powder, and pepper, then continue cooking for another 5 minutes, adding water as needed, until both sides are brown.
