Nyumen is a hot Japanese somen noodle soup featuring vegetables and various meats.

Instructions

Start boiling water for the somen noodles.

Cook somen noodles per package directions, then drain, rinse, and set aside.

Bring dashi soup stock to a boil in a separate pot, then stir in soy sauce, mirin, and salt.

Add the cooked somen to the dashi soup, bring to a boil, and immediately remove from heat.

Serve in bowls, garnished with chopped green onion.
