Instructions

  1. Start boiling water for the somen noodles.

  2. Cook somen noodles per package directions, then drain, rinse, and set aside.

  3. Bring dashi soup stock to a boil in a separate pot, then stir in soy sauce, mirin, and salt.

  4. Add the cooked somen to the dashi soup, bring to a boil, and immediately remove from heat.

  5. Serve in bowls, garnished with chopped green onion.
