Nürnberger Lebkuchen (German Gingerbread) Recipe
A traditional German Christmas cookie, Nürnberger lebkuchen features warm spices and is simple to prepare.

Instructions

Preheat oven to 375 F.

Cream together butter, sugar, and eggs until light and fluffy.

Alternate adding flour, spices (or 1 tablespoon prepared lebkuchen spices), cocoa powder, and baking powder with milk; mix until combined.

Fold in the nuts, lemon peel, rum, raisins, and coconut.

Line baking sheets with parchment; place oblaten or draw 3-inch diameter circles.

Drop about 3 tablespoons of dough onto each wafer or into each circle, then smooth.

Bake for 15 to 20 minutes, reducing oven temperature to 350 F if cookies brown too quickly.

Let cookies cool for a few minutes on the baking sheet, then transfer to a rack.

While cookies cool, combine sugar and water in a small saucepan and bring to a boil for a few minutes.

Add vanilla and 1 to 2 tablespoons rum or liqueur, then sift in confectioners' sugar and stir until smooth.

Brush the warm glaze over the warm cookies and let dry completely.
