Nürnberger Lebkuchen (German Gingerbread) Recipe

Instructions

  1. Preheat oven to 375 F.

  2. Cream together butter, sugar, and eggs until light and fluffy.

  3. Alternate adding flour, spices (or 1 tablespoon prepared lebkuchen spices), cocoa powder, and baking powder with milk; mix until combined.

  4. Fold in the nuts, lemon peel, rum, raisins, and coconut.

  5. Line baking sheets with parchment; place oblaten or draw 3-inch diameter circles.

  6. Drop about 3 tablespoons of dough onto each wafer or into each circle, then smooth.

  7. Bake for 15 to 20 minutes, reducing oven temperature to 350 F if cookies brown too quickly.

  8. Let cookies cool for a few minutes on the baking sheet, then transfer to a rack.

  9. While cookies cool, combine sugar and water in a small saucepan and bring to a boil for a few minutes.

  10. Add vanilla and 1 to 2 tablespoons rum or liqueur, then sift in confectioners' sugar and stir until smooth.

  11. Brush the warm glaze over the warm cookies and let dry completely.
