Instructions

  1. Preheat the oven to 375 F and start boiling 1/4 cup of water.

  2. In a large bowl, combine 2 cups rolled oats, 1 cup all-purpose flour, 3/4 cup lightly packed brown sugar, 1 1/4 teaspoons fine sea salt, and 1/4 teaspoon baking soda.

  3. Incorporate 3/4 cup shortening or butter into the dry mixture until well combined.

  4. Stir in the 1/4 cup boiling water until a thick, sticky dough forms.

  5. Press the dough onto a parchment-lined 9x11-inch baking sheet to 1/4-inch thickness, then score into desired shapes.

  6. Bake for 13 to 15 minutes until dry and lightly browned; for crispier oatcakes, reduce oven to 325 F and bake an additional 5 minutes.

  7. While warm, cut along the scored lines, then allow the oatcakes to cool completely.
