Northern German Kale and Sausage (Grünkohl und Pinkel)

Instructions

  1. Start boiling water.

  2. Clean and chop kale leaves, discarding thick stems; blanch fresh kale for 1 minute, then drain, or use thawed frozen kale.

  3. Brown bacon in a pan, then sauté onion and blanched kale in the rendered grease.

  4. Cook for 2-3 minutes, then add water to cover, stir in beef bouillon, and simmer for 30 minutes.

  5. Stir in mustard, then place sausages and optional ham on top and simmer for an additional 30 minutes.

  6. Season with pepper; add salt only after tasting due to salty meat.

  7. Serve hot.
