North Indian-Style Bihari Kabab

Instructions

Fry onions until soft, drain, and grind into a smooth paste.

Combine the onion paste, spices (garlic, ginger, cumin, coriander, black pepper, red chili powder, star anise, mace), yogurt, and beef strips; add salt and refrigerate for 8 to 10 hours.

One hour before cooking, mix in papaya paste if desired. Preheat grill or broiler to medium-high and thread 8 to 10 beef strips per skewer.

Grill until the beef reaches desired doneness.
