Non-Alcoholic Holiday Eggnog

Instructions

Whisk eggs, egg yolks, sugar, and salt in a 3-4 quart pan.

Slowly whisk milk into the egg mixture until combined.

Cook over the lowest heat, stirring constantly, until the mixture reaches 160 F and coats a spoon (about 35-45 minutes).

Strain the thickened mixture through a fine sieve into a large bowl.

Stir in vanilla extract and nutmeg.

Pour into a covered container and refrigerate for at least 4 hours or up to 3 days.

Before serving, whip heavy cream to soft peaks, then fold it into the cold custard.

Serve in chilled cups, garnished with nutmeg.
