No-Flour Pan Gravy Recipe

A simple and delicious reduction sauce, this pan gravy is prepared without flour.

Instructions

  1. Retain 1 to 2 tablespoons of pan drippings and any brown bits in the cooking pan.

  2. Heat the pan to medium-high; add shallot and wine.

  3. Cook, stirring and scraping, until most wine evaporates, shallot softens, and pan bits release.

  4. Stir in the stock, ensuring all brown pieces detach from the pan.

  5. Reduce liquid to just under 1/2 cup, then remove from heat.

  6. Gradually whisk in butter until fully incorporated.

  7. Season with salt, pepper, and a squeeze of lemon juice.

  8. Serve hot.
