No-Churn Roasted Banana Dulce de Leche Ice Cream

No-churn ice cream is prepared with caramelized bananas, rich dulce de leche, and brown sugar for a decadent dessert.

Instructions

  1. Preheat oven to 425 F. Line a baking sheet with foil and cooking spray.

  2. Place 4 peeled, quartered bananas cut-side up on the sheet; sprinkle with 1/4 cup brown sugar.

  3. Roast bananas for 12 to 15 minutes until softened and sugar caramelizes.

  4. Scrape hot bananas and juices into a blender. Add 1 can dulce de leche, 1 tablespoon vanilla or rum, 1/4 teaspoon salt, and 1/4 cup heavy cream; blend until smooth and thick.

  5. Whip remaining 1 3/4 cups heavy cream until stiff peaks form.

  6. Fold banana mixture into whipped cream until mostly incorporated.

  7. Scrape ice cream base into a 9x5-inch loaf pan. Smooth top, cover with plastic wrap, and freeze until solid, at least 8 hours or overnight.
