Instructions

  1. Start boiling several inches of water for a double boiler.

  2. Place a parchment-lined baking sheet in the freezer for 15 minutes.

  3. Combine oats, dates, ground cashews, soymilk powder, and cocoa powder in a bowl; set aside.

  4. Melt chocolate chips in a mixing bowl set over the boiling water.

  5. Remove chocolate from heat and stir in maple syrup.

  6. Mix the oat mixture into the melted chocolate until well combined.

  7. Scoop two-tablespoon portions onto the frozen parchment-lined baking sheet.

  8. Refrigerate for 1-2 hours until the cookies are set.

  9. Serve chilled or at room temperature.
