Preheat the oven to 200 C/Gas 6.

Slice potatoes. In a roasting tin, warm 2 tablespoons olive oil over medium heat.

Add potatoes to the hot oil and cook until pale gold on both sides, turning occasionally.

Add thickly sliced lemon, anchovy, black pepper, and pour in the stock.

Place fish on top of potatoes, brush with olive oil, then season with herbs, salt, and pepper.

Bake for 25 to 30 minutes, or until fish flakes easily from the bone. Serve with potatoes and spoon over the cooking liquid.
