Niçoise Tuna Salad With Dijon Dressing

Start boiling salted water.

Cook new potatoes in boiling salted water for 10-15 minutes until tender, then drain, rinse with cold water, and slice.

Cook green beans in boiling salted water for 2 minutes until tender, then drain and rinse with cold water.

Grill or broil tuna for 3-4 minutes per side, aiming for rare to medium-rare.

Combine dressing ingredients in a blender or screw-top jar and blend or shake until well combined.

Arrange spinach, hard-cooked eggs, and sliced potatoes on salad plates. Layer with sliced tuna, green beans, red onion, and olives, then garnish with tomato wedges.
