Niçoise Tuna Salad With Dijon Dressing

Instructions

  1. Start boiling salted water.

  2. Cook new potatoes in boiling salted water for 10-15 minutes until tender, then drain, rinse with cold water, and slice.

  3. Cook green beans in boiling salted water for 2 minutes until tender, then drain and rinse with cold water.

  4. Grill or broil tuna for 3-4 minutes per side, aiming for rare to medium-rare.

  5. Combine dressing ingredients in a blender or screw-top jar and blend or shake until well combined.

  6. Arrange spinach, hard-cooked eggs, and sliced potatoes on salad plates. Layer with sliced tuna, green beans, red onion, and olives, then garnish with tomato wedges.

  7. Serve the salad drizzled with dressing or offer it on the side.
