Niçoise Salad

A Niçoise salad features pan-seared potatoes, tuna, green beans, olives, and hard-boiled egg, complemented by a flavorful garlicky vinaigrette.

Instructions

  1. Start boiling salted water; boil potatoes for 4-6 minutes.

  2. Remove potatoes, drain, and slice in half.

  3. Return water to boil; blanch green beans for 2 minutes.

  4. Transfer green beans to ice water, then drain and pat dry.

  5. Heat olive oil in a skillet over medium-high heat; sear sliced potatoes cut-side down.

  6. Sear potatoes for 1-2 minutes until browned, then remove, toss with salt, and set aside.

  7. Blend oil, vinegar, mustard, garlic, and anchovies until smooth; season with salt and pepper to taste.

  8. Toss salad greens with 2 tablespoons dressing, then arrange on plates and distribute seared potato halves.

  9. Toss green beans, olives, and tomatoes with additional dressing and arrange on the salad.

  10. Place tuna and hard-boiled egg quarters on each salad; garnish with parsley and serve.
