Niçoise Salad
A Niçoise salad features pan-seared potatoes, tuna, green beans, olives, and hard-boiled egg, complemented by a flavorful garlicky vinaigrette.

Instructions

Start boiling salted water; boil potatoes for 4-6 minutes.

Remove potatoes, drain, and slice in half.

Return water to boil; blanch green beans for 2 minutes.

Transfer green beans to ice water, then drain and pat dry.

Heat olive oil in a skillet over medium-high heat; sear sliced potatoes cut-side down.

Sear potatoes for 1-2 minutes until browned, then remove, toss with salt, and set aside.

Blend oil, vinegar, mustard, garlic, and anchovies until smooth; season with salt and pepper to taste.

Toss salad greens with 2 tablespoons dressing, then arrange on plates and distribute seared potato halves.

Toss green beans, olives, and tomatoes with additional dressing and arrange on the salad.

Place tuna and hard-boiled egg quarters on each salad; garnish with parsley and serve.
