New England Style Pot Roast

Instructions

  1. Season the pot roast with salt and pepper.

  2. Place onions in a slow cooker, then top with the seasoned roast; add a bay leaf, vinegar, and water.

  3. Cover and cook on low for 5 to 7 hours until the roast is tender.

  4. Approximately 30 minutes before the roast is done, start boiling salted water and cook carrots, celery, and cabbage wedges until tender; remove the roast from the slow cooker and set it to high.

  5. Add the cooked vegetables to the slow cooker liquids, cover, and cook on high for 15 to 25 minutes until the vegetables are done.

  6. Meanwhile, melt butter in a saucepan, then stir in instant onion and flour.

  7. Drain 1 1/2 cups of broth from the slow cooker and pour it into the saucepan with horseradish and salt.

  8. Cook over low heat, stirring continuously, until the sauce thickens and becomes smooth.

  9. Serve the prepared sauce over the roast and vegetables.
