Instructions

  1. In a pot, sauté bacon in butter over medium heat until cooked but not crisp.

  2. Stir in flour and onion, then cook for 5 minutes.

  3. Incorporate potato, corn, milk, salt, and pepper; mix thoroughly.

  4. Bring the mixture to a gentle simmer, then reduce heat to low and cook, stirring occasionally, until potatoes and onions soften.

  5. Puree half the chowder in a blender until smooth, then return it to the pot with the remaining unblended portion.

  6. Adjust seasoning to taste and serve.
