Instructions

  1. Rinse and drain the rice.

  2. Knot the pandan leaf and lightly pound the lemongrass stalk.

  3. In a pot, combine the rinsed rice, coconut milk, knotted pandan, pounded lemongrass, and optional makrut lime leaf.

  4. Bring the mixture to a boil, then cover and cook for 20 minutes.

  5. Halfway through cooking, briefly stir the rice with a fork, then continue cooking until done.

  6. Serve the coconut rice topped with sambal and desired garnishes.
