A fragrant coconut rice, infused with pandan, is served alongside spicy sambal and various garnishes such as eggs, pickled vegetables, or fried anchovies.

Instructions

Rinse and drain the rice.

Knot the pandan leaf and lightly pound the lemongrass stalk.

In a pot, combine the rinsed rice, coconut milk, knotted pandan, pounded lemongrass, and optional makrut lime leaf.

Bring the mixture to a boil, then cover and cook for 20 minutes.

Halfway through cooking, briefly stir the rice with a fork, then continue cooking until done.

Serve the coconut rice topped with sambal and desired garnishes.
