Nasi Goreng Recipe - Dutch-Indonesian Fried Rice

Instructions

  1. Heat 1 tablespoon sunflower oil in a large frying pan until shimmering hot.

  2. Fry a few eggs for 30 seconds on high heat, then reduce to medium, baste, and cook for another minute until done. Carefully remove.

  3. Halve 1 cucumber, scoop out seeds, and slice into thin half-moons.

  4. Halve 1 chile, scrape out seeds, and finely chop; add to the cucumber.

  5. Prepare dressing by mixing 2 tablespoons sunflower oil, 1 tablespoon plain vinegar, and a pinch each of sugar, salt, and pepper. Toss with cucumber and chile; serve immediately.

  6. Heat oil in a wok or large frying pan.

  7. Sauté onions, garlic, and bacon lardons for a few minutes until vegetables are glazed and bacon is cooked.

  8. Add eggs to the wok and cook until they begin to set, then add cooked rice in batches while stirring constantly.

  9. Serve the Nasi Goreng topped with the fried eggs and cucumber salad.
