Instructions

  1. Hard boil 6 eggs, then cool, peel, and set aside.

  2. Combine ground lamb, onion, garlic, turmeric, red chili, garam masala, one egg, and salt; mix thoroughly into a smooth paste. Divide into 6 equal portions.

  3. Encase each hard-boiled egg with a lamb portion, smoothing the coating.

  4. Dust the coated koftas with rice flour.

  5. Heat oil in a deep pan. Whisk one egg. Dip each floured kofta in egg wash, then deep-fry in hot oil until golden brown. Drain on paper towels.

  6. For the gravy, heat cooking oil in a deep pan, then sauté chopped onions until light golden. Add ginger and garlic pastes.

  7. Cook for 2-3 minutes, then stir in tomato paste, remaining spices, and salt. Fry until oil separates.

  8. Add yogurt and water, mix well, and cook for 2 minutes.

  9. Gently fold the prepared koftas into the gravy to coat.

  10. Cook for 1 minute, then turn off heat. Slice koftas horizontally.

  11. Garnish with fresh coriander and serve hot with chapatis.
