Nanaimo Bars
Delicious no-bake Nanaimo bars feature three layers of cookie crumbs, pudding, and chocolate.

Instructions

Prepare a double boiler by simmering water in a saucepan with a heatproof bowl set over it.

Combine 1/2 cup butter, granulated sugar, and cocoa in the bowl; cook, stirring, until melted. Whisk in a beaten egg, vanilla, and salt, cooking until thickened and reaching 160 F.

Remove from heat, then stir in graham cracker crumbs, coconut, and nuts until well blended. Press the mixture into a buttered and parchment-lined 9-inch square pan, then chill for 20 to 30 minutes.

Beat 1/4 cup softened butter, cream or milk, and pudding mix with an electric mixer. Gradually beat in sifted confectioners' sugar until light and fluffy, then spread over the chilled bottom layer and return to the refrigerator.

Melt chocolate with 2 tablespoons butter over simmering water, then stir and cool slightly. Pour the chocolate over the custard layer, cover, and chill for at least 2 hours until set before serving.
