Instructions

  1. Preheat oven to 350 F if baking filled crepes.

  2. Blend flour, milk, water, eggs, butter, and salt until smooth; let batter rest for 30 minutes.

  3. Heat a buttered crepe pan or skillet over medium heat.

  4. Pour 2 ounces of batter into the hot pan, swirl to coat, and cook until light brown on both sides.

  5. Remove crepe and repeat with remaining batter, rebuttering the pan as needed.

  6. Place 2 tablespoons of sweet or savory filling on each crepe, then fold the sides inward and roll from the bottom up.

  7. Pan-fry filled crepes in butter over medium-high heat or bake in a buttered casserole dish until the filling is set.
