Mustard-Marinated Pork Tenderloin

Instructions

  1. Preheat the oven to 375 F.

  2. Trim any excess fat and silverskin from the pork tenderloin.

  3. Combine olive oil, Dijon mustard, grainy mustard, honey, lemon juice, garlic, salt, pepper, and rosemary in a shallow dish.

  4. Add the pork tenderloin, turning to coat it completely with the mixture.

  5. Cover the dish and marinate the pork in the refrigerator for 8 to 24 hours.

  6. Transfer the marinated pork to a roasting pan, discarding any remaining marinade.

  7. Roast for 30 to 40 minutes, or until the internal temperature reaches 155 F.

  8. Remove the pan from the oven, cover tightly with foil, and let stand 10 minutes before slicing.
