Instructions
-
Heat a sauté pan over medium-high heat; add 3 tablespoons butter, sliced onion, and 1 teaspoon salt. Sauté for 5 minutes until softened.
-
Add mushrooms to the pan; sauté for 3 minutes until browned. Stir in Worcestershire sauce and dried thyme, then cook for 1 minute and set aside.
-
Melt 2 tablespoons butter in a cast-iron pan over medium-high heat, then toast burger buns, cut-side down, until golden brown.
-
Season burgers with the remaining 1 teaspoon salt and all of the pepper. Cook burgers in the cast-iron pan for about 5 minutes per side for medium doneness.
-
Whisk together mayo, salt, pepper, lemon juice, truffle oil, and grated garlic to create the aioli.
-
During the final 2 minutes of cooking, top burgers with some shredded cheese, then add the mushroom mixture and cover with the remaining cheese. Cover the pan to melt the cheese.
-
Spread aioli on buns, then place the mushroom and cheese-topped burger on each bun.
