Instructions

  1. Heat a sauté pan over medium-high heat; add 3 tablespoons butter, sliced onion, and 1 teaspoon salt. Sauté for 5 minutes until softened.

  2. Add mushrooms to the pan; sauté for 3 minutes until browned. Stir in Worcestershire sauce and dried thyme, then cook for 1 minute and set aside.

  3. Melt 2 tablespoons butter in a cast-iron pan over medium-high heat, then toast burger buns, cut-side down, until golden brown.

  4. Season burgers with the remaining 1 teaspoon salt and all of the pepper. Cook burgers in the cast-iron pan for about 5 minutes per side for medium doneness.

  5. Whisk together mayo, salt, pepper, lemon juice, truffle oil, and grated garlic to create the aioli.

  6. During the final 2 minutes of cooking, top burgers with some shredded cheese, then add the mushroom mixture and cover with the remaining cheese. Cover the pan to melt the cheese.

  7. Spread aioli on buns, then place the mushroom and cheese-topped burger on each bun.
