Instructions
-
Preheat oven to 500 F with a cooking rack placed on the bottom rung, optionally with a pizza stone.
-
Place peeled garlic cloves on a foil square, drizzle with 1 tablespoon olive oil, season with pepper, enclose, and roast in the oven for 20-30 minutes until tender.
-
While garlic roasts, trim and chop the mushrooms.
-
Heat 2 tablespoons olive oil in a frying pan over medium-high heat. Add mushrooms and salt; cook, stirring, until liquid evaporates and mushrooms brown. Set aside.
-
Grate the cheese and chop the mint.
-
Stretch half of the dough thinly and place it on an oiled baking sheet or floured pizza peel.
-
Evenly distribute half of the fontina, cooked mushrooms, roasted garlic cloves, chopped mint, and Parmesan over the dough. Drizzle with more oil and grate black pepper.
-
Bake for 8-10 minutes until the cheese is melted and the crust is well browned.
-
Repeat steps 6-8 for the remaining dough and toppings.
