Mushroom Pizza With Roasted Garlic and Mint

Instructions

  1. Preheat oven to 500 F with a cooking rack placed on the bottom rung, optionally with a pizza stone.

  2. Place peeled garlic cloves on a foil square, drizzle with 1 tablespoon olive oil, season with pepper, enclose, and roast in the oven for 20-30 minutes until tender.

  3. While garlic roasts, trim and chop the mushrooms.

  4. Heat 2 tablespoons olive oil in a frying pan over medium-high heat. Add mushrooms and salt; cook, stirring, until liquid evaporates and mushrooms brown. Set aside.

  5. Grate the cheese and chop the mint.

  6. Stretch half of the dough thinly and place it on an oiled baking sheet or floured pizza peel.

  7. Evenly distribute half of the fontina, cooked mushrooms, roasted garlic cloves, chopped mint, and Parmesan over the dough. Drizzle with more oil and grate black pepper.

  8. Bake for 8-10 minutes until the cheese is melted and the crust is well browned.

  9. Repeat steps 6-8 for the remaining dough and toppings.
