Instructions

  1. Melt butter in a large saucepan over medium-high heat.

  2. Add mushrooms; cook, stirring, for 10 minutes until browned and juices evaporate.

  3. Stir in flour; reduce heat to medium and cook for 5 minutes.

  4. Whisk in 1 cup cold broth, then add the remaining broth and thyme.

  5. Bring to a simmer; reduce heat to low and simmer for 30 minutes, stirring occasionally.

  6. Season with salt and pepper to taste.
