Instructions

  1. Start boiling 2 cups of water for the lentils.

  2. Heat oil in a large sauté pan over medium-high heat. Add diced onion and 1 teaspoon salt; stir frequently for 20-25 minutes until deeply caramelized.

  3. While onions cook, add lentils to the boiling 2 cups of water. Bring to a boil, then simmer covered for 7 minutes. Remove from heat and set aside.

  4. Remove the onion pan from heat, add 2 cups of water, bring to a boil, then simmer for 5 minutes to extract flavor.

  5. Add rice, par-cooked lentils with their liquid, remaining 1 teaspoon salt, pepper, and cumin or 7 spice to the onion-water mixture. Stir and adjust seasonings.

  6. Cover the pan, bring to a boil, then reduce heat to low and simmer covered for 25 minutes.

  7. Fluff the lentils and rice with a fork, then drizzle with olive oil before serving.
