Muffin Cup Ham and Cheddar Quiches

Instructions

  1. Preheat oven to 375 F.

  2. Spray 8 muffin cups with nonstick spray.

  3. Unwrap crescent roll dough, slice into eight rounds, and roll each into a 4-inch circle on a floured surface.

  4. Press dough circles into the prepared muffin cups.

  5. Add 1 1/2 teaspoons shredded cheese, 1 tablespoon chopped ham, and a sprinkle of parsley to each dough-lined cup.

  6. Whisk eggs with light cream or milk, salt, and pepper until blended.

  7. Spoon 1 1/2 tablespoons egg mixture into each cup, then top with 1 1/2 to 2 teaspoons cheddar cheese; avoid overfilling.

  8. Bake for 14 to 16 minutes, until filling is set and crust is golden brown.

  9. Cool quiches for 5 minutes, then loosen sides and serve hot.
