Instructions

  1. Grate zucchini, then squeeze out excess water with cheesecloth or paper towels; combine it with carrots and onions in a large bowl.

  2. Stir in dill weed, feta, flour, and eggs until the mixture forms a thick batter.

  3. Heat 1/2 cup olive oil in a frying pan.

  4. Pour 2 tablespoons of batter per fritter into the hot oil and fry until golden brown on each side.

  5. Drain the cooked fritters on paper towels and serve immediately.
