Msemen Dough for Square-Shaped Moroccan Pancakes

Combine flour, semolina, sugar, salt, and yeast in a bowl; add warm water to form a soft, non-sticky dough, adjusting water or flour as needed.

Knead the dough for 10 minutes by hand or 5 minutes in a stand mixer until smooth and elastic.

Lightly oil a work surface and your hands, then divide the dough into smooth balls; set the oiled balls aside, cover, and let rest for 10 minutes.

Flatten each dough ball into a very thin circle or square using oiled hands, then dot with butter and sprinkle with semolina.

Fold one side of the flattened dough to the center, then fold the opposite side to create a strip; next, fold both ends of the strip to the center to form a square.

Repeat the folding process for all dough balls and set the folded squares on an oiled surface.

Heat a frying pan over medium to medium-high heat.

Flatten each folded dough square to approximately double its size just before placing it in the hot pan.

Fry the msemen, turning several times, until golden brown and cooked through, then remove to a rack to cool.

Serve the msemen plain or with butter, honey, or jam.
