Mozzarella Cheese Recipe

A quick 30-minute process yields delicious homemade fresh mozzarella cheese.

Instructions

  1. Dissolve rennet in water.

  2. Pour milk into a nonreactive pot, add citric acid, and heat over medium heat to 88F.

  3. At 88F, add the rennet solution, stir slowly, and continue heating until the milk reaches 105F; turn off heat and allow curds to form.

  4. Scoop curds into a large glass bowl and press to remove excess whey.

  5. Microwave curds for 1 minute on high, then press out whey; repeat twice more for 35 seconds each.

  6. Knead the cheese until smooth, reheating for 10 seconds in the microwave if it hardens, and optionally incorporate 1-2 teaspoons of salt.

  7. Stretch the cheese by pulling it into a rope and folding; reheat for 10 seconds if it tears.

  8. Form the soft, pliable cheese into balls or logs and serve.
