Moustos, or grape must, is an ancient Greek culinary base for puddings, candy, and syrup, easily prepared at home.

Instructions

  1. If using wood ash, sprinkle it over the grapes.

  2. Squeeze grapes to extract juice, then strain it into a pot, discarding all solids. If using eggshells, add them to the pot.

  3. Bring the juice to a boil, skimming any foam that rises, then boil for 5 minutes.

  4. Turn off the heat, let it sit for 5 minutes while continuing to skim foam, then cool completely.

  5. Carefully transfer the cooled must into containers, avoiding the settled silt.
