Mounds Cake With Coconut Filling

Instructions

  1. Bake and cool the cake layers as per package directions, then horizontally split each layer into two.

  2. To make the filling, combine evaporated milk, granulated sugar, and marshmallows in a saucepan over medium heat, stirring until the sugar dissolves and marshmallows melt; remove from heat and stir in coconut.

  3. For the chocolate icing, bring heavy cream to a simmer in a separate saucepan over medium heat, then add vanilla and chocolate chips, stirring until melted, and keep warm.

  4. Spread the coconut mixture evenly between the stacked cake layers and on top.

  5. Drizzle the warm chocolate icing over the top, allowing it to drip down the sides, and optionally garnish with flaked coconut.
