Moroccan Vegetarian Carrot and Chickpea Tagine

Instructions

  1. In a tagine or lidded skillet, sauté onions and garlic in olive oil over medium-low heat for several minutes.

  2. Stir in salt, ginger, turmeric, cinnamon, black pepper, cayenne pepper, ras el hanout, parsley or cilantro, carrots, and water.

  3. Bring to a simmer over medium-low heat, then cook covered until carrots are tender (up to 25 minutes in a skillet, longer in a tagine).

  4. Add honey, chickpeas, and optional chile peppers and raisins; continue simmering until chickpeas are heated and sauce is reduced and thick.

  5. Taste, adjust seasoning, and serve garnished with parsley or cilantro.
