Moroccan Tagine of Shrimp in Tomato Sauce Recipe

Instructions

  1. Clean shrimp by washing, removing heads, legs, and shells, deveining, then rinsing again and draining.

  2. Prepare tomatoes by peeling, seeding, and chopping them.

  3. Heat olive oil in a large tagine or pot over medium-low heat.

  4. Sauté onions until soft, then add garlic and cook for one to two minutes until fragrant.

  5. Stir in the chopped tomatoes, spices, and herbs.

  6. Cover and simmer the sauce for approximately 30 minutes, stirring occasionally, until it thickens.

  7. Add the cleaned shrimp to the simmering tomato sauce, incorporating a few tablespoons of water if a thinner consistency is preferred.

  8. Cover and cook the shrimp for several minutes, then stir gently and continue cooking until just done.

  9. Remove from heat, discard the bay leaf, and garnish with chopped parsley, fresh pepper, and lemon slices before serving.
