Instructions

  1. Thoroughly wash and drain sardine fillets, removing all bones and scales, then process them into a thick paste using a food processor.

  2. Combine the pureed sardines with spices, parsley, and coriander in a bowl, kneading until well mixed.

  3. Shape the mixture into small balls, about the size of large marbles, wetting your hands as needed to prevent sticking.

  4. Peel, seed, and chop the tomatoes, then transfer them to a skillet or tagine.

  5. Add spices, parsley, coriander, garlic, and olive oil to the tomatoes and stir to combine.

  6. Bring the tomato mixture to a simmer over medium heat, cover, and cook for 15 to 30 minutes, stirring and mashing the tomatoes until a smooth sauce forms.

  7. Stir a few tablespoons of water into the sauce, then add the sardine balls, cover, and simmer for about 15 minutes, stirring occasionally until cooked through.

  8. Serve the sardine balls and sauce warm, ideally with crusty bread.
