Moroccan Meskouta Orange Cake

Instructions

  1. Preheat the oven to 350 F (180 C) and prepare a tube or loaf pan by greasing and flouring it.

  2. Beat eggs and sugar in a large bowl until thick, then gradually incorporate the oil.

  3. Whisk flour, baking powder, and salt in a separate bowl, then add this dry mixture to the egg-sugar mixture.

  4. Add orange juice and beat until smooth; then mix in the orange zest and vanilla.

  5. Pour batter into the prepared pan and bake for approximately 40 minutes, or until a toothpick inserted into the center comes out clean.

  6. Remove cake from oven, cool in the pan for 7-10 minutes, then invert onto a wire rack to cool completely.

  7. Serve the cooled cake, optionally dusted with confectioners' sugar.
