Instructions

  1. Combine all ingredients, excluding casings, in a large bowl.

  2. Knead thoroughly to distribute spices, herbs, and harissa.

  3. Shape as desired, or grind and stuff into sausage casings.

  4. Refrigerate for at least 30 minutes for optimal flavor.

  5. Cook on a preheated grill or under a broiler until the meat's internal temperature reaches 155F.
